Preserved Lemons Recipe and Video

Recipe makes 4 Jars

Ingredients

• 25-30 Small to Medium Lemons

• ½ Tsp Red Pepper Flakes

• ½ Tsp Whole Coriander

• 4 One Pint Size Canning Jar

• Optional: Cinnamon Stick or Bay leaf

• Diamond Crystal® Kosher Salt

Sterilize 4 Canning Jars using boiling water and dry

Juice 6-8 Lemons in pouring bowl and set aside

Crosscut lemon making an X. Leave one ½ inch of the lemon left in tact at the bottom to keep the lemon together.

Fill each Lemon with 1 Tbs Diamond Crystal® Kosher Salt allowing the excess salt to fall into the bowl.

Place lemons into the jar as you are filling them with salt. Add whole coriander and red pepper to the jar, or other favorite spices.

Fill the jar with 3-5 lemons (depending on size) Once the jar is full, press down on the top lemon to release some of the juices into the jar. Add an additional tablespoon of Diamond Crystal® Kosher Salt to the jar.

Fill the jar using the lemon juice that was set aside

Seal the lid then gently shake to distribute the juice into the jar

Over the next 2 days, gently turn the jar over. Let the jar rest in a dark place for 3-4 weeks until ready to use When ready to use the lemons, separate the peels from the pulp, discarding the pulp once separated

Rinse lemon peels under water Mince or julienne pieces to use on your favorite foods such as salads, roasted vegetables, fish or chicken.
