Banana Bread


Servings: One Loaf

Total time: 1 hour 20 minutes


1 teaspoon baking soda

½ cup butter

2 cups all-purpose flour

¼ teaspoon Diamond Crystal° Kosher salt

¾ cup brown sugar

2 eggs

2 1/3 cups mashed overripe bananas

  1. Preheat oven to 350 degrees and lightly grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine flour, baking soda and salt. In a separate medium size bowl cream together butter and brown sugar. Stir in eggs and mashed bananas until well mixed.  Stir banana mixture into flour mixture. Pour batter into pan.
  3. Bake in the oven for 60-65 minutes, until a toothpick into the center of the loaf comes out clean. Let cool in pan for 10-15 minutes.

* Optional: add chocolate chips or nuts if preferred
