Spanish Rice

Spanish Rice

A delicious rice side or entree if protein is added

Total time: 40 minutes


2 tablespoons vegetable oil

1 cup uncooked regular long-grain white rice

1 medium onion, finely chopped (1/2 cup)

2 ½ cups water

1 ½ teaspoon Diamond Crystal® Kosher salt

¾ teaspoon chili powder (leave out for less spice)

1 small green pepper, chopped

1 8oz can of tomato sauce

1 large tomato chopped


1) In a medium sized skillet, heat oil over medium heat. Cook rice and onion for about 5 minutes until the rice is golden brown in color and the onion has softened.

2) Stir in remaining ingredients except the tomato. Heat until boiling and reduce heat. Cover skillet and simmer for about 20 minutes (stirring occasionally). Stir in chopped tomato, cover and simmer for 5 more minutes until tender. Enjoy!
