Seared Scallops on Fennel Spring Greens with Kumquats

Sear scallops in unsalted butter on Medium-High Heat. Salt lightly using Diamond Crystal® Kosher Salt.

INGREDIENTS

4-6 Scallops

Diamond Crystal® Kosher Salt

1 Tablespoon Unsalted butter

Fennel bulb

Handful of Endive and your favorite herbs

Oil and vinegar

DIRECTIONS

Sear scallops in unsalted butter on Medium-High Heat. Salt lightly using Diamond Crystal® Kosher Salt.  Thinly shave a fennel bulb and then toss with Watercress, Endive and Herbs. Plate. Add Kumquats and sprinkle with Vinaigrette to finish. Serve.
