A refreshing Greek salad

Lemon Dressing:
¼ cup olive oil
2 tablespoons fresh lemon juice
1 ½ teaspoon Dijon mustard
½ teaspoon sugar
¼ teaspoon Diamond Crystal® Kosher Salt
1/8 teaspoon pepper to taste
Salad:
5 cups baby spinach leaves
1 head of Boston lettuce torn apart
1 cup crumbled feta cheese
24 pitted Greek olives
4 medium green onions sliced
2 tomatoes cut into wedges
1 medium cucumber sliced
1. In a tightly closed container combine all dressing ingredients and shake
2. In a large bowl toss salad ingredients and dressing, serve immediately
